I would that Health Secretary in his continuing victories to make America healthy again, would look into forcing the USDA into a program for growing and exporting the weed of the Northern Plains, in the Jerusalem Sunchoke.
I ran across and article in Russia which in the Don River area, the Chinese are being sold tons of these sunchokes for a great profit to Russia. What fascinated me is the Russian sunchokes have a red blush and are quite large. In my testing of these tubers, the largest in America are white, while there are numerous smaller ones available. The sample I have from Saskatchewan is suffering from the chem sprays, but I am working on saving and growing it. It too has a pink blush to it.
In bottomland situations, I have had sunchokes as big as softballs. They can get huge with no fertilizer, just moisture. They do though taste more earthen than potatoes which people have to get used to. They keep best in the ground as when dug up, they begin to shrink.
A Russian manufacturer from the Lipetsk region has carried out the first export of Jerusalem artichoke to China. The information was confirmed by the press service of the Federal Development Institute, which is referred to by RIA Novosti.

If the USDA would be a sugar gene into this as they do corn, assist it in keeping quality, this would be a huge market for the United States for Robert Kennedy to bring to fruition.
