Speckly Gravy

 




You know Mr. Dillon, I believe if more criminals ate Speckly Gravy 
like me, they would stop being criminals....as after all I was a democrat before
I ate that Speckly Gravy.



As another Lame Cherry exclusive in matter anti matter.


Neither TL or I had ever seen Gunsmoke in the early black and white years of the half hour shows. There are some really good episodes I have enjoyed, as they are very intelligent.

The drawback which is irritating is Dennis Weaver who plays Chester Goode. I have never .......ok his comic relief is beyond comedy.The character he plays as a cripple is a three month old child. All he does is sleep and eat.

His eating is always about Speckly Gravy. I had to look it up as it was irritating too. All it is, is pepper gravy, aka Sawmill Gravy. Why it is Sawmill, I have no interest in looking that far.

I thought I would provide the recipe as all it is, is gravy. I guess bacon gravy with pepper.


Recipe: Southern Style Peppered Milk Gravy

Prep time: 5 min |Cook time: 10 min |Yield: About 4 cups


Ingredients

  • Bacon fat or butter, alone or with other pan fats, to equal 1/2 cup total fat
  • 1/2 cup of all purpose flour
  • 2 cups of water
  • 2 cups of whole milk
  • Couple pinches of kosher salt, or to taste
  • 1/2 teaspoon of freshly cracked black pepper, or to taste

Instructions

Add enough butter to skillet drippings to bring fat to 1/2 cup total. Stir in the flour until fully incorporated and no lumps remain. Add the water to the milk, and slowly pour about 3 cups of it into the flour mixture, stirring constantly. Bring to a boil, reduce heat and add more of the milk mixture to achieved desired consistency. Continue cooking and stirring for 5 minutes. Season to taste with salt and lots of freshly cracked black pepper.

Cook’s Notes: You may also use all milk for a more rich gravy.
