Dakota Breakfast

This was developed in my kitchen to assist people who have gluten, allergy and problems with chemicals in food.
It is a wonderful fun breakfast for people when food has become a poison to them. More people are finding out how sad it is to not to be able to eat a great many foods they enjoy. This is a good cleansing brunch or breakfast that is actually good.

We will say it is named for that original Rough Rider, Teddy Roosevelt of the Elk Horn Ranch, Dakota Territory, the Badlands.

Never know what you children are going to get here.


Cereal
1 cup Ivory Teff grain
3 cups water

Syrup
1 cup brown sugar
1/4 cup water

Poached egg
1 egg
butter

Sauce
Heavy cream

salt pepper



*In a 4 quart sauce pan, boil 3 cups water. Add 1 cup teff and cover, simmering for 20 minutes.
Stir teff occasionally at the end.
(Teff is a grass grain from Ethiopia which is small, but has a nice popcorn and nutty flavor to it. It is important as a gluten free and foundation flavor to this brunch breakfast.)

When done, place into large single serving bowl. (May be done a week before and frozen and simply thawed, and reheated in a microwave.)

*For the syrup, in a 1 quart sauce pan boil 1/4 cup water and then add 1 cup brown sugar. Do not over cook as it will become candy. Just dissolve the sugar.

Drizzle over teff cereal.

*For the poached egg, use an egg poacher to achieve a nice uniform shape as the poached egg will be placed on top of the teff cereal.
Butter poaching tray, boil water, place egg in tray and cook 4 to 6 minutes, depending on if you prefer sunny side or hard eggs.

Lastly, carefully poor sweet heavy cream around the outside edge of the cereal. You want an "island" look for the egg to sit on and not a soup.

Season egg with preservative and iodine free canning salt and large cracked pepper.
You now have a hearty Dakota Breakfast which is this author's original invention.

*Additional notes: Ivory Teff was chosen as it has a distinct flavor and wonderful texture to accent the softness of the egg, the homemade syrup provides a wonderful sweet and caramel addition, with the lucidity of the poached egg being free from the more heavy sulfur flavor of pan frying in oil, mixes with the sweet cream to give a lightness for a cheerful breakfast which will stay with you all day.
