Rich in Asians
Before I met TL, my contact with Asian cuisine was one of YUCK in that chow mien stuff of greasy hamburger with those burnt noodles that all tasted like some Lutheran funeral dinner minus the red jello.
I love to eat, but for the above early experience never ventured anywhere near any Asian cooking.
TL's Mom though has this interesting recipe that TL breathes in like air as it is very good. It really is simple in Filipino Adobo, and as I ponder it, think it is like all things corned or pickled as vinegar is the basis of it, and being acid it keeps.
TL informed me to tell you in reminding me that cheap vinegar works better than the expensive Heinz types as the cheap brews are sweeter and not so robust to taking one's breath away.
You start with 3 to 5 pounds of chicken breast and cut it into cubes.
In a pot, you would add 2 cups of vinegar.
2 tablespoons of black pepper corns
5 cloves of garlic as TL likes garlic as much as chicken
1/2 cup of soy sauce, low salt
3 bay leaves
1 cup of water
...and then the chicken.
Boil for 3-5 minutes, then simmer for an hour.
TL's Mom after 45 minutes will take the chicken out and the brown it in a pan to lock in the flavor, but is not necessary. It is a very fast recipe and it does keep in refrigeration for quite some time due to the acidity of the vinegar. As I stated it is like kimchi in Korea, corned beef in England, pickled fish in Norway and unique in the Philippines had Spanish rule for some time, and one rarely finds anything Spanish in pickles.
It works well with rice and as I stated since TL started me on Indochinese area foods, I wonder what things Cambodian to whatever would be like.........well not whatever as I know of Mandarin cooking and boiled millet is nothing I am really interested in as the millet is the meal, the spice and the everything
