Nash Buckingham Goose Sauce

 



As another Lame Cherry exclusive in matter anti matter.

I honestly had thought that I had posted this recipe on the blog, but when I looked, I could not find it. Then I remembered that I was not going to share this secret recipe as I wanted to save it and market it someday.

The recipe is from Nash Buckingham's Beaver Dam shack and I think Aunt Molly did the cooking there. Nash was a bird hunter from the South and very well known from his gun to his dogs. I have a few of his recipes like Country Pudding and this goose sauce.

I'm posting it as I doubt I will ever have the money or the time for a business. I really like this sauce. I love the flavor of goose and duck, and do not want it covered up, but when I made this, with what I had on hand.......I used gooseberry jam, I was amazed how sweet and tangy this was all at the same time. It reminded me of what Heinz 57 wanted to  be when it grew up.

Mr. Nash was allot like Major Charles Askins Sr. in nothing appealed to him more than a good dog, a good gun, some good company and going bird hunting. I concur with that completely as that is what speaks to my heart. With my first dog, Dixie, I soon found myself enjoying watching the dog enjoy the hunt, more than I did the hunting.

I love metal and wood, not what guns are now. I love lead 2 shot. I love clean air with a hint of dust in it in the fall. I love birds out of range and birds I never got a shot at, because I love to watch them fly away.


1 cup currant jelly
1 tablespoon prepared horseradish
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
4 tablespoons lemon juice
1 cup dry red wine

Combine all ingredients in saucepan and over medium heat until thickened.






Oh to be in twilight when the sky has set the sun
With a loving dog, and pleasant day, holding a well worn gun...........
